Peanut Butter & Nutella Swirl Cookies

Um... Yes Please!

Ingredients

1/2 cup unsalted butter, softened
3/4 cup smooth peanut butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups all-purpose flour
Approx. 1/4 cup Nutella

Directions

Preheat oven to 350° F.

Combine butter, peanut butter, sugars, egg, and vanilla. Mix until well blended.

Add flour, baking soda and salt. Drizzle Nutella on top of the dough then swirl it through the dough with a butter knife.

Chill dough 15 minutes in the refrigerator. Roll into balls by hand. Place on parchment lined cookie sheet. Using a fork, press down the balls to flatten slightly. Bake until edges are very lightly browned (about 7 to 10 minutes).

Allow to rest 2 minutes on cookie sheet before transferring cookies to a cooling rack.

Baked Apples and Sweet Potatoes!!!

Have any of you made a Chili using pumpkin?? I found a recipe the other day and thought it looks fabulous. I'm going to try it this weekend. I'll let you know ;)

In the mood for soup!

Taco Soup that is!!

Prep Time: 5 minutes, Cook Time: 10 mintues, Servings: 5-6
  • 1 can Low sodium black beans (drained and rinsed)
  • 1 can hot and spicy chili beans
  • 1 can low sodium pinto beans
  • 1 lb. lean ground beef
  • 1 chopped onion
  • 1 small can green chilies
  • 1/2 cup jalapenos
  • 1 can whole kernel corn
  • 3 can diced tomatoes with green chilies
  • 1 can diced tomatoes Italian seasoning
  • 1 packet taco seasoning mix
  • 1 packet ranch dressing mix
  1. In a medium skillet brown ground beef with chopped onion. Drain and set aside.
  2. In a large pot mix diced tomatoes, green chillies, and corn.
  3. Next, add ground beef and onions and black beans, chili beans, and pinto beans.
  4. Lastly, add in taco mix, ranch mix, and jalapenos and simmer on medium heat for 5-7 minutes.
  5. Serve hot and enjoy! Optional toppings include reduced fat sour cream and 2% Mexican cheese!

Taco soup is one of my FAVORITE fall time recipes. I love that we can get so many meals out of one recipe.

Happy Birthday, Howard!

Happy Labor Day, friends!

The temperature has finally dropped there in KY!

I'm very excited for 2 things....
1. Bring out my fall wardrobe
2. Put out my fall wreath

It that appropriate? It's Labor Day, right? haha


Today is also my sweet Howard's birthday. He turns 1 today. Oh my, where has the time gone? haha

We will be celebrating with a little birthday party tonight. His 2 puppy friends are coming over for a little play time.

Misc. Monday

I had a fabulous weekend! I love spending quality time with my Husby. Friday night we relaxed, I cooked dinner and we went to the mall. Husby was in need of a new pair of sunglasses. Of course I also had to run into a few of my favorite stores. I got an ah-dorable pair to jeans from GAP where they were 40% off Whoo Hoo...
Saturday we had some projects around the house that needed to be done; cleaning out the flower beds, mowing the yard, laundry and basic cleaning. Saturday night we went back home for a cook-out with Husby's side of the family.
Sunday we went to church, took the puppy for a walk, and I started making a mesh wreath. I'm using the blue and white mesh in hopes it will turn out to be a cute UK wreath! We will see ;)

Like always, this will be a crazy week! I have some great things going on.
Today I'll be making Banana Wraps with a group. Tomorrow I'll be  filming a TV segment on healthy after-school snacks where I'll also show this little treat!
Spread 1 tablespoon peanut butter on one side of 100% whole wheat tortilla. Then spread 1 tablespoon strawberry fruit spread or strawberry jelly on top.


Sprinkle 2 tablespoons of seedless raisins over jelly.

Peel a banana


 Place banana at one end of tortilla. Roll tortilla up to cover the banana


Use a sharp knife to cut in half.

The rest of this week is filled with meetings!!
